Instructions
In a medium mixing bowl, thoroughly combine the softened cream cheese, powdered sugar, and vanilla extract using a hand mixer or a whisk until you achieve a smooth and creamy texture. Set this delicious cheesecake mixture aside.
In a separate bowl, whisk together the eggs, milk, and ground cinnamon until the mixture is well combined and slightly frothy.
Take two slices of brioche bread and spread a generous layer of the cream cheese mixture on one side of each slice. Evenly layer the sliced strawberries over the cream cheese, then place the remaining two slices of bread on top to form a sandwich.
Preheat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter in the pan, ensuring it coats the surface evenly.
Carefully dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side. Be cautious not to over-soak to avoid a soggy texture.
Once the skillet is hot, place the sandwiches in the pan and cook for approximately 3-4 minutes on each side, or until they are beautifully golden brown and crispy. Repeat this step for any remaining sandwiches, adding the remaining tablespoon of butter to the skillet as needed.
After cooking, remove the sandwiches from the skillet and allow them to cool slightly before slicing each sandwich in half diagonally.
