  • For the chocolate ganache, create a smooth mixture by combining the 1 cup of dark chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl. Heat the mixture in 30-second intervals, stirring between each interval until the chocolate is fully melted and smooth.
  • In a separate bowl, whip the 1 cup of heavy cream along with 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. To fill each eclair, carefully cut a small slit in the side and pipe or spoon in the whipped cream filling.
  • Finally, dip the tops of the filled eclairs into the warm chocolate ganache, allowing any excess to drip off before placing them onto a serving platter.

Notes

For an elegant touch, dust the eclairs with a light sprinkle of powdered sugar before serving. Arrange them on a decorative plate and garnish with fresh berries for an eye-catching burst of color.
